Recipe for Gajar Halwa

Gajar Halwa is a delicious and popular Indian dessert made with grated carrots, milk, sugar, and a variety of aromatic spices. Here’s how to make it:


1 kg carrots, peeled and grated
1 liter milk
1 cup sugar
1/2 cup ghee (clarified butter)
1/2 cup chopped nuts (cashews, almonds, and pistachios)
1/4 teaspoon cardamom powder
1/4 teaspoon nutmeg powder

In a large, heavy-bottomed pan, heat the ghee over medium heat.
Add the grated carrots to the pan and sauté for 5-10 minutes until they become slightly soft.
Pour in the milk and stir well. Cook the mixture over medium heat, stirring occasionally, until most of the milk has been absorbed and the mixture has thickened.
Add the sugar and mix well. Continue cooking and stirring until the sugar has dissolved and the mixture thickens further.
Add the chopped nuts, cardamom powder, and nutmeg powder. Mix well and cook for another 5-10 minutes until the mixture becomes glossy and the carrots are fully cooked.
Serve hot or cold, garnished with additional chopped nuts.
