Biryani is a flavorful and aromatic rice dish that originated in the Indian subcontinent. Here’s a recipe for a traditional chicken biryani:

Ingredients:

2 cups of basmati rice, soaked in water for 30 minutes
500 grams of boneless chicken, cut into small pieces
1 cup of yogurt
2 onions, sliced
2 tomatoes, chopped
4 cloves of garlic, minced
1-inch piece of ginger, minced
1 teaspoon of cumin seeds
4-5 green cardamom pods
2-3 black cardamom pods
2-3 cloves
1 cinnamon stick
1 bay leaf
1 teaspoon of red chili powder
1 teaspoon of turmeric powder
1 teaspoon of coriander powder
1 teaspoon of garam masala powder
Salt to taste
1/4 cup of cooking oil
2 tablespoons of ghee (clarified butter)
A handful of chopped coriander leaves and mint leaves
Fried onions for garnishing
Instructions:

In a large pot, bring 8 cups of water to a boil. Add the soaked rice, 1 teaspoon of salt, and a tablespoon of oil. Cook the rice until it is 70% done. Drain and set aside.
In a large pan, heat the cooking oil and ghee over medium heat. Add the cumin seeds, green and black cardamom pods, cloves, cinnamon stick, and bay leaf. Fry the spices for a few seconds until fragrant.
Add the sliced onions and fry until golden brown.
Add the minced garlic and ginger and fry for a minute.
Add the chopped tomatoes and cook until they are soft and mushy.
Add the boneless chicken pieces and cook for 5-7 minutes until the chicken is no longer pink.
Add the red chili powder, turmeric powder, coriander powder, and garam masala powder. Mix well and cook for a few minutes.
Add the yogurt and mix well. Cook for another 5-7 minutes until the chicken is cooked through.
In a large oven-safe dish, spread a layer of cooked rice. Add a layer of the chicken masala on top of the rice. Add another layer of rice on top of the chicken masala.
Sprinkle some chopped coriander leaves and mint leaves on top of the rice. Repeat the layers until all the rice and chicken masala are used up.
Cover the dish with aluminum foil and bake in a preheated oven at 180°C for 30-35 minutes.
Garnish with fried onions and serve hot with raita and salad.
